Easy Cheesy Eggplant Casserole combines the hominess of your favorite comfort food, while still adding veggies to your family’s diet. This casserole is so easy to make and your family and friends will love the cheesy goodness.

It is the perfect side dish for a family dinner, or take it to a pot luck or covered dish dinner to share with your friends. This is a family favorite around our house and we rarely have leftovers. I hope you enjoy this comforting casserole as much as we do.

Cheesy Eggplant Casserole

Ingredients

  • 3 medium eggplants peeled and cubed
  • 1 cup milk
  • 1/2 cup butter (1 stick)
  • 8 ounces cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • 1/2 cup panko bread crumbs

Instructions

  • Boil cubed eggplant for about 25 minutes. The eggplant will be tender, but not mushy.
  • While eggplant is boiling combine milk, butter and cheddar cheese in a saucepan. Cook over medium heat until cheese is almost completely melted.
  • Drain eggplant and spread evenly in a 2 quart casserole dish. Pour cheddar cheese sauce over eggplant.
  • Cover with shredded mozzarella cheese, and then sprinkle with panko bread crumbs.
  • Bake at 350 degrees for about 45 minutes until mozzarella cheese is melted and top is golden brown.

Sauteed Garlic Spinach Recipe

I’m always looking for new and tasty ways to increase the healthy foods to my family’s diet. Adding a variety of colorful fruits and vegetables, is always my goal. Spinach has so many health benefits, that I try to include it in our diet as much as possible.

This sautéed spinach with garlic is such a quick and healthy side for a weekday dinner, and tasty enough to be served with an elegant entrée. I hope you enjoy this quick and easy side dish too!

Ingredients

  • 1 tablespoon olive oil extra virgin
  • 4 cloves garlic sliced
  • 1 bunch fresh spinach (bagged fresh spinach can be substituted)
  • salt and pepper to taste

Instructions

  • Wash spinach thoroughly and remove stems. Set spinach leaves aside on paper towels to dry.
  • Slice garlic cloves thin. It is important that the slices are relatively evenly sliced, to ensure even cooking.
  • Heat olive oil in large sauté pan, over medium heat. Add garlic slices and cook until lightly browned. This will take about 5 minutes.
  • Add spinach and cook until leaves are wilted, stir frequently. This will take about 2 minutes.
  • Season with salt and pepper, to taste.

I’ve always loved soup and this healthy vegetable soup recipe makes it guilt free. Not only are you adding a variety of brightly colored vegetables to your diet, it’s also a low-calorie alternative, thanks to the broth base. You’ll feel good about both eating this healthy vegetable soup and serving it to your family.

This recipe makes a large batch of soup, which reheats well. I love making this soup when I have a busy week ahead. It’s nice to know I have a healthy meal to heat up quickly for a week of lunches.

Ingredients

  • olive oil cooking spray
  • 1 cup arrots sliced
  • 1 onion diced
  • 3 cloves garlic minced
  • 6 cups fat free chicken broth (or broth of your choice)
  • 1 head Napa cabbage chopped
  • 6 ounces fresh spinach chopped
  • 1 can whole tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt (or to taste)
  • 2 zucchini diced

Instructions

  • Spray a large saucepan with olive oil cooking spray, and warm over medium heat.
  • Saute onion, garlic and carrots until they are soft, about 5 minutes.
  • Add broth, cabbage, spinach, tomatoes, basil, oregano and salt to the onion mixture and bring to a boil.
  • Reduce the heat and simmer, covered for about 15 minutes.
  • Add zucchini and cook an additional 5 minutes.
  • Serve warm.
