Mashed Potato Pancakes

Mashed Potato Pancakes

My grandmother would always make mashed potato pancakes with our leftover mashed potatoes when I was young. This versatile recipe can be prepared for breakfast the next morning (as a replacement for hash browns), as an appetizer, side dish or a snack. Around grandma’s house, they were usually made for an after-dinner for an evening snack and never lasted very long.

Mashed Potato Pancakes

Mashed potato pancakes, made with left over mashed potatoes, just like grandma used to make. This versatile recipe can be prepared for breakfast the next morning (as a replacement for hash browns), as an appetizer, side dish or a snack.

Ingredients

  • 2 cups Mashed Potatoes with Cream Cheese
  • 1 egg
  • 1/4 cup flour
  • salt and freshly ground pepper to taste

Instructions

  • Heat about 1/4 inch olive oil in a frying pan to medium heat.
  • Combine all ingredients in a mixing bowl. This will be the consistency of thick pancake batter.
  • Drop batter into hot oil and fry until golden brown. I prefer smaller pancakes and use about 1/4 cup batter per pancake.
  • Remove from oil and place on paper towels to remove excess oil.
  • Serve warm with sour cream and/or apple sauce.

Oven Roasted Rosemary Red Potatoes

Serves 4

Ingredients:

1 1/2 pounds red potatoes (washed and cut into wedges)
2 sprigs fresh rosemary (washed and leaves removed)
3 T. olive oil
1/2 t. salt
1/8 t. pepper

Directions:

  1. Preheat oven to 400 degrees.
  2. Combine rosemary leaves, salt and pepper in a small bowl.
  3. Coat potatoes well with olive oil in a mixing bowl. Add seasonings to the bowl and coat well.
  4. Spread potatoes evenly in a single layer on a baking sheet, and bake for 30-35 minutes or until tender and lightly browned.
  5. Serve.

Mashed Potatoes with Cream Cheese

Ingredients

  • 3 1/2 pounds potatoes
  • Coarse salt and freshly ground pepper to taste
  • 8 ounces cream cheese softened
  • 4 ounces unsalted butter (1 stick)
  • 3/4 cup milk

Instructions

  • Peel and cut potatoes into 1 inch cubes.
  • Add potatoes and and 1 tablespoon salt in a medium pot, cover with cold water by 2 inches, and bring to a boil.
  • Reduce heat, cover partially, and simmer until potatoes are tender, about 35 minutes. Drain.
  • Combine potatoes, cream cheese, butter, and milk in a mixer bowl fitted with the paddle attachment. Beat until combined.
  • Season with salt and pepper, and beat to desired consistency.
