1 1/2 pounds red potatoes (washed and cut into wedges)
2 sprigs fresh rosemary (washed and leaves removed)
3 T. olive oil
1/2 t. salt
1/8 t. pepper
- Preheat oven to 400 degrees.
- Combine rosemary leaves, salt and pepper in a small bowl.
- Coat potatoes well with olive oil in a mixing bowl. Add seasonings to the bowl and coat well.
- Spread potatoes evenly in a single layer on a baking sheet, and bake for 30-35 minutes or until tender and lightly browned.
