Patriotic Yogurt Parfait

Patriotic yogurt parfaits offer a cool and refreshing alternative or addition to, the often overly sweet holiday desserts. These yogurt parfaits are easy to make and are great for the Fourth of July or Memorial Day get-togethers.

I love the fact that they only contain a mixture of yogurt and a variety of fresh fruit. How could you go wrong, by choosing this healthy alternative?

Patriotic Yogurt Parfait

Patriotic yogurt parfaits offer a refreshing and healthy dessert alternative for a 4th of July get together.

Ingredients

  • 32 ounces vanilla yogurt
  • 2 pints blueberries
  • 12 ounces raspberries
  • sprigs of fresh mint for garnish

Instructions

  • Layer yogurt, raspberries, yogurt and finish with blueberries.
  • Top with 1 more spoonful of yogurt then a sprig of mint or the garnish of your choice.

Notes

  • The exact ingredient amounts will vary depending on the size of the glasses you are using.
  • I prefer using whole milk yogurt for this recipe, to add additional richness to the dessert.

Spanakopita (Greek Spinach and Cheese Casserole)

Serves 4

Ingredients:

1 large Onion, chopped
3 cloves Garlic, minced
3 T. Olive Oil
2 pounds Frozen Chopped Spinach, thawed
2 Eggs, beaten
1/2 cup Ricotta Cheese
1 cup Feta Cheese, crumbled
1/4 cup Dried Parsley (or 1/2 cup Fresh Parsley)
Salt and Pepper to taste
1/4 cup Olive Oil
8 sheets Filo Dough

Directions:

  1. Preheat oven to 350 degrees.
  2. Heat 3 Tablespoons olive oil  in a large skillet, add onion and garlic and saute until soft and translucent, but not browned.
  3. Drain thawed spinach, then to pan with onions and garlic. Combine ingredients and cook until moisture is removed, about 5 minutes.
  4. Allow mixture to cool.
  5. Combine eggs, ricotta cheese, feta cheese, parsley, salt, and pepper in a bowl. Add the cooled spinach mixture, and stir to combine.
  6. Oil bottom and sides of a 9 inch baking dish.
  7. Place one layer of phyllo dough in pan, brush oil on phyllo with a pastry brush. Add 3 more layers of phyllo dough, brushing each with oil after they are added. The phyllo will hang off the edge of your pan on 2 sides.
  8. Add the spinach mixture to the baking dish.
  9. Layer the 4 remaining phyllo sheets to the dish, brushing each layer with oil after it is added.
  10. Fold the phyllo dough that has been hanging over the edge of the pan to the top of the Spanakopita. Brush top with remaining oil.
  11. Bake in preheated oven for 30 to 40 minutes, until golden brown.
  12. Cut into squares and serve warm.

Easy Alfredo Sauce

 

When you need some homemade comfort food, this easy Alfredo Sauce recipe will hit the spot. This sauce can easily made at home, so it has no preservatives. Just serve this Alfredo Sauce over your favorite pasta for a great tasting (and comforting) entree or side dish. You can make it without meat for a vegetarian meal, or add seafood to this versatile pasta sauce for another option.

Easy 5 Ingredient Alfredo Sauce

Ingredients

  • 1 stick butter
  • 1 cup 1/2 & 1/2
  • 1 cup Parmesan cheese
  • 1 tablespoon dried parsley
  • 1 tablespoon dried basil

Instructions

  • Melt butter in the bottom of a sauce pan on medium heat.
  • Add remaining ingredients and stir to combine well.
  • Cook over medium heat until sauce is thoroughly warmed.
  • (Optional) Sauce can be thickened at this point if desired. To thicken the sauce, make a mixture of 2 tablespoons of corn starch with 1/4 cup of milk or water, and add it to the sauce. Stir occasionally over medium heat until thickened.
  • (Optional) Seafood of your choice can be added, if desired. Add seafood (like crab meat, cooked shrimp, or canned clams) to the sauce and continue to cook until thoroughly warmed.
  • Serve over linguine or your favorite pasta. Can be garnished with additional Parmesan cheese, parsley, and/or basil.
